To make dandelion vinegar, harvest the root and leaves from a dandelion plant or many (you will be “weeding” at the same time!). | In a jar filled with herb and vinegar, the vinegar mother usually grows across the top of the jar, clinging to the herb, and looking rather like a damp, thin pancake. These can then be used in salad dressings or as drinking oxymels. After a 2 minute steam, pull the dandelion roots out and drop them into ice water.
